Ingredients

  • 2 MISSION Plain Pita Breads
  • 400g steamed baby potatoes, thinly sliced
  • 50g baby rocket leaves
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt & freshly ground black pepper, to taste
  • 200g smoked salmon, thinly sliced
  • 200g light cream cheese
  • 2 tbsp chopped dill
  • 1 tbsp wholegrain mustard
  • 2 tbsp caster sugar

Instructions

 

1. Place MISSION Pita Breads on a plate lined with paper towel and heat in a microwave for 40 seconds. Using a serrated knife, cut in half and form a pocket in each half.
 
2. Toss the potatoes, rocket, oil and lemon juice together and season with freshly ground pepper and salt. Fill pita pockets with salmon and potato salad.
 
3. Combine cream cheese, dill, mustard and sugar and drizzle over the smoked salmon. Serve immediately.
