Ingredients & Instructions


  • 2 cups Mission Multigrain Chips, crushed (some extra chips for decoration)

  • ¾ cup All purpose flour

  • ½ cup Corn meal

  • 3 tsp Baking powder

  • ½ tsp Salt

  • ½ cup Sugar

  • 2 Eggs, Beaten

  • 1 cup Evaporated milk

  • ½ cup Cream of corn

  • ½ cup Melted butter, a little extra for greasing muffin pan

  • Step 1

    In a large bowl, whisk the crushed chips, all purpose flour, corn meal, baking powder, salt and sugar together until well combined.

  • Step 2

    Add in eggs, evaporated milk, cream of corn and melted butter and mix evenly so that it’s not clumpy.

  • Step 3

    Spoon mixture into greased muffin pan to three quarters full.

  • Step 4

    Preheat oven to 180°C and bake for approx. 20 mins. Break some chips and use the corners and press into the middle of the muffins. Serve while hot.
