3 Mission Potato Wraps

2 Small potatoes, peeled, cooked and diced

2 slices Turkey bacon, with fat strip removed

½ tbsp Cilantro leaves, chopped

1 Hard-boiled egg white, diced

1 tbsp Mayonnaise

¼ Onion, diced
-
1 Chilli padi, finely chopped

¼ tsp Salt

¼ tsp Cayenne pepper

3 Butter lettuce leaves

Step 1
Pan fried turkey bacon until crispy. Dice into cubes

Step 2
Mix all ingredients together until combined. Place a Lollo Rossa leaf along the centre of each wrap and top with spoonfuls of cilantro potato salad

Fold bottom and top edges of Mission wrap over filling and roll sides up tightly, like a burrito. Secure wrap at each end with a cocktail skewer and cut each wrap in half diagonally. Serve immediately
